1. Layer half of the potatoes, onions, and chicken in the bottom of the slow cooker.
2. Sprinkle half of the crumbled bacon, garlic powder, paprika, salt, and pepper over the first layer.
3. Repeat the layers with the remaining potatoes, onions, chicken, and seasonings.
4. Pour the chicken broth evenly over the layers.
5. Cover and cook on low for 6-8 hours or until the potatoes and chicken are tender.
6. About 30 minutes before serving, sprinkle the shredded cheddar cheese over the top.
7. Cover and cook for an additional 30 minutes or until the cheese is melted and bubbly.
8. Stir in the sour cream just before serving and garnish with chopped fresh chives if desired.
